Lemon-Garlic Bok Choy

Bok choy asks for very little: hot oil, garlic, a squeeze of lemon, and about three minutes of your attention. The result is bright, crisp-tender greens that work as a side or a light main over rice.

Ingredients

  • 4 cups baby bok choy, halved
  • 2 tablespoons olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon soy sauce (optional, for extra depth)
  • Salt & freshly ground black pepper, to taste

Method

  1. Heat the oil: In a large pan or wok, heat olive oil over medium heat.
  2. Sauté the garlic: Add minced garlic and cook for about 30 seconds, until fragrant.
  3. Add the bok choy: Place baby bok choy halves in the pan and stir-fry for 2-3 minutes, until lightly wilted but still crisp.
  4. Season: Drizzle with lemon juice and soy sauce, then season with salt and black pepper to taste.
  5. Serve & enjoy: Transfer to a plate, garnish with toasted sesame seeds, and serve warm!
